The Shun DM-0700 Classic Paring Knife has a 3.5-inch VG-MAX Blade with a Pakkawood handle, ideal for peeling, trimming, or coring. It is a bit pricey but it is a high-quality Japanese Damascus steel knife that is extremely sharp and beautiful in appearance. The grip is comfortable, and the Pakkawood handle does not get slick with water. It is perfect for smaller jobs such as peeling skins, slicing small tomatoes, or general cutting of small vegetables. The blade is very thin and sits in the knife block only a tiny bit further up to where the steel begins to curve in the back. It is important to care for these knives properly, such as no dishwashers and immediately hand clean and dry after use. Never use them on a glass cutting board.
